Jack at Fork and Bottle recently offered us a challenge: buy an artisanal or farmtead cheese and investigate food and beverage pairings with that cheese. Fork & Bottle will then take all the cheese and food pairings and create a master reference page with only the good pairing results.
If the Garagistes are “dead†because the wines don’t last, well then I say phooey! Here in Iberia, some of our greatest wines have lasted many lifetimes. In fact, we still drink Madeiras from Thomas Jefferson’s cellar. Read more!

After 5 days and 4 nights, we tasted some of the most delicate Finos and Manzanillas, thick unctuous PXs and nutty, yeasty Amontillados. Yet, we feel like we’ve only spotted the tip of sherry’s oenophilic iceberg of flavors.
